I made this Coffee Walnut loaf with my mum today and it’s DELICIOUS!

Followed the recipe to a tee. I used the strongest instant coffee I could get 🙂 As I love coffee. Honestly I think the coffee taste was perfect. If you don’t have very strong coffee, don’t be afraid to add more.

Also we didn’t have quite enough butter so used ~100g. I didn’t pipe the icing as not enough time, just slathered it on with a rubber spatula. By the time I added the chopped walnuts and chocolate sprinkles it was devine 😀

I should add I cooked this at 160 celcius fan bake for 60mins in total. I started off with 45 and it was very wet, then added 15mins = too much. So I’d say 55mins is spot on.
