A fresh Strawberry Sundae is the best thing to make when faced with a flat of fresh strawberries. Serve this over vanilla or chocolate ice cream for the classic sundae of my dreams!

I don’t mean to be so bossy when it comes to strawberry desserts, but I really don’t want you to miss what happens when you put a small splash of rose water with strawberries!

If you made my Strawberry Tart for Two, you know what I mean. Plus, you probably have the rest of the bottle to use!

If you still haven’t take the plunge to buy rose water, head to your closest Middle Eastern market, revel in the sweets aisle (and the spice aisle! and the bread aisle!), and grab a bottle of rose water. It’s not expensive at all, but when you taste it, you will not understand why it isn’t the same price as gold per ounce.

Ingredients

  • Strawberries. Hull and chop fresh strawberries until you fill an entire cup.
  • Honey. I prefer honey to sugar for sweetening this strawberry sundae because honey has floral notes. However, you can absolutely use one tablespoon of granulated sugar instead of one tablespoon of honey. You need an equal amount of water, no matter which sweetener you use.
  • Rose Water. Again, totally optional, but adding 1/2 teaspoon of rose water to the sauce just before serving makes the strawberry flavor intensify.
  • Ice Cream. My favorite ice cream to use for a strawberry sundae is vanilla, of course, but a chocolate gelato is also a household favorite!

How to Make a Strawberry Sundae

Combine the chopped strawberries, water and honey in a small saucepan.

Bring this mixture to a boil, and let it cook for 1 minute.

Then, turn off the heat, let it cool. Finally, stir in the rosewater.

Mash the berries with a fork or run the strawberry sundae syrup through a blender to make it perfectly smooth.

 How to Store Leftovers

Just like in an ice cream shop, all fruit sauces should be stored in the fridge. This fresh strawberry sauce stays fresh for up to 5 days chilled. Do not freeze.

Ingredients

  • 1 cup diced fresh strawberries
  • 1 tablespoon water
  • 1 tablespoon honey
  • 1/2 teaspoon rose water
  • 1 pint vanilla ice cream

Instructions

  • In a small saucepan, combine the strawberries, water, and honey. Cook until it comes to a boil. Simmer for 1 minute, skim the foam, and then turn off the heat.
  • Let cool to room temperature. Mash the berries with a fork, or run through a food processor to make a perfectly smooth sauce.
  • Stir in the rose water.
  • Serve over scoops of vanilla ice cream.
